Flavorful :: FRIDAY :: Greek Quiche

I need to work on the timing of my posts. If I want to be a "real" blogger and blog each day, I need to do it early in the morning so it can actually count for the day. Not sure how many people check for a blog update at 11:36pm.
Here is one of my new favorite recipes. So flavorful and healthy too! This would make a great weekend morning breakfast or brunch, especially paired with some pancakes topped with berries (& a mimosa too!). I might just have to make one for myself this weekend. Enjoy :)

{Greek Quiche}
-1 frozen pie crust
-2 eggs
-3/4 c. of milk
-1 10 oz. package of frozen spinach (make sure to squeeze out the water)
-1/2 c. of feta cheese
-1/3 c. of sundried tomoatoes (or 1 fresh tomatoe/a few roma tomatoes diced)
-1/2c. of a red onion
-salt & pepper to taste


*Mix all ingredients together. Pour mixture into pie crust and bake for 30-35 minutes at 350 degrees. You will know when the quiche is finished when you can poke a knife into the center and it comes out clean. Left overs taste great too with all the flavors "hanging out" for a longer period of time in the fridge.
